An Awesome Recipe, in my opinion, is one that is healthy and easy.
I love to have friends over, and prefer to be available to visit with them rather than be stressing over the stove! So here is to easy, guilt free, healthy eating!

Festive Spaghetti Squash
One spaghetti squash
Sun-dried tomatoes in olive oil, chopped
Fresh Spinach, chopped
salt and pepper
Cut squash in half lengthwise. Place cut side down in a baking pan with about 1/4 inch of water. Steam at 350 for about 45 min. to one hour until tender to the touch.
Scrape the squash out with a fork. Put about 1 T of the olive oil from the tomatoes in a frying pan. Saute squash and desired amount of tomatoes until hot. Add chopped spinach; cook for about 1-2 minutes until wilted. Add salt and pepper to taste.

Greg's world famous bean salad
3 cans black beans
1 can corn
1/2 sweet onion
1 red or orange pepper
1 green pepper
handful of chopped fresh cilantro
olive oil
balsamic vinegar
salt and pepper
other options:
cucumber
tomato
zucchini
black olives
Rinse beans and put in large bowl. Add drained corn. Cut up all
vegetables into tiny pieces, add to bowl. Add a couple of tablespoons
of olive oil and vinegar, salt and pepper to your taste.
Great party dish!
Garden Style Turkey Meatloaf
1 1/2 lbs. lean ground turkey
1 10 oz. pkg. frozen chopped spinach, thawed and drained OR 1/2 c. finely chopped red or green pepper
1 c. quick cooking oats
1/2 c. finely chopped onion
1/2 c. shredded carrots
2 egg whites or 1 egg, slightly beaten
1/3 c. skim milk
1 1/2 t. Italian seasoning
1/2 t. salt
1/4 t. black pepper
Combine all ingredients in a large bowl; mix lightly. Shape meatloaf mixture into a 9x5 inch loaf pan. Bake at 350 for about 1 hour. Let stand 5 minutes before slicing

I like it plain, but if you like gravy with your meat, you can add some no-fat/low fat gravy. Without the gravy, a serving of 1/8 of the meatloaf is about 150 calories.
Makes great leftover sandwiches! (Remember to use healthy whole grain bread.)
